BBQ Spit Roast is Ideal for Special Events

By Nora Seabolt

Even in the country, the delicious aroma of a barbecue travels across the area and announces that the season has officially started. Whether you have a deck or patio, celebrate good weather with outside events. Traditional picnic foods like coleslaw, potato salad and chicken make it easy to gather family and friends to the table for a meal. A spit roast provides a very delectable meal when it is prepared over the grill and cooked slowly. It is too hot for roasting meat in the kitchen, so the BBQ is the perfect choice for cooking.

Clean the grill from top to bottom using water and safe solutions. Rinse them thoroughly and wipe them dry. If the roast has ties already in place, leave them alone since they hold the roast together while turning. For extra flavor, place fresh onion slices and one or two garlic cloves in the center of the roast along the side of the spit. Use your favorite prepared marinade or use an interesting recipe to make one from scratch. Adding salt after cooking helps prevent the roast from drying out.

Once you know who will be at the barbecue, decide which foods to serve. Hot dogs and hamburgers are great for kids and teens, but some adults want just a bit more. Both chicken and potatoes are perfect when prepared on the grill. Any time is a good time for a barbecue and while the spit roast is cooking, you can prepare other foods you plan to serve. Cover cardboard boxes with plastic cloths to make instant end tables that sit beside chairs or hold hors d'oeuvres. Be prepared for a lot of company as you cook on the grill, since people enjoy the action.

It is very convenient to put the prepared lettuce, tomatoes, onions and sauces out for guests to add as desired. Slice mushrooms and tomatoes ahead of time. Making things like special sauces and fried bacon strips for the barbecue is better when done ahead of time. Heat things like the hamburger buns, rolls, or prepared bacon strips a few minutes before the meat is ready to serve and then place them in a central location. Cheddar, provolone and jack cheese are all delicious slices to put on the hamburger before eating. It will melt while sitting in the bun.

An advantage of solar lights is the gleam does not interfere with the starlight from above. Lights help guests to see steps and walkways. Colorful solar lights in the pool, pond or garden area are a great conversation piece. Automatic timers ensure that lights come on when the shadows start to lengthen. Both economical and eco-friendly, people will relax more with the glow chasing away the dark of night and adding to safety from tripping or falling.

Rather than facing a pile of dirty dishes, use disposable cups, plates, and tableware. The guests will readily place their trash in a convenient trash bin lined with a plastic bag. If you have a tablecloth on the table, use hanging weights to hold it down when the wind blows. One method of getting help with cleanup is to invite guests to pack up food they want to take home. The event will be fun, as well as a success.
